Brewing Guide: Chemex

The Chemex produces a clean, filtered taste, there’s nothing better! The Chemex essentially is a manual drip coffee maker. The great thing about Chemex is you have control over the fundamental elements, such as water temperature and extraction time.

Time: Start your timer at the beginning of extraction, time: 3:30-4min.
Grind: #5.0 (a.k.a. course drip grind)
Weight: 37 grams of coffee/600 grams water

Before you begin, rinse filter with a least 600 grams of water. The thicker side of the filter goes towards the spout to ensure proper airflow during extraction.

Initial Pour: Cover all coffee with about 60-70 grams of water. Allow coffee to bloom for 30 seconds.

2nd Pour: Add additional water, pat down bloom using spoon.

3rd stage pour: Add more water and pat down bloom until a slurry is created. Being careful to not agitate too much. Once slurry has created a crust around the filter do not allow water to sink below crust. Maintain water depth until water volume of 600 grams has been achieved.

3 even stirs at the end before the water drains out. Should create a flat or slightly inverted cone.
