What makes it taste so great?
Coffee, is not a bean, it is a very complex seed bearing a very complex array a flavors, textures, and acidities. Our coffees are very carefully selected by our roaster, Drew Park, keeping in mind that there is a flowering season, a harvest season, and shipping season to be certain that the green coffee is fresh even before it is roasted. The roasting process of our coffee takes place here, in Nashville, and each varietal is roasted differently in order to give special attention to their individual characters. Once the roasted coffee has arrived at CREMA, which is up to two times per week, we are very careful to be sure to use it within the next seven days or so to make sure you always get a proper espresso or drip coffee.

Drew’s coffee is hand roasted, hand packed and we feel the love he puts into it every time we take a sip. Consistency from batch to batch comes with experience, and he has his hand on every aspect of the coffee from roasting, packing and in fact still handwrites the coffee name on every label!
Drew has roasted millions of pounds of coffee in his lifetime, and with every batch pays close attention to aromas, colors, and visuals. He works on a small Samiac roaster, the roaster he learned on many years ago. His philosophy about coffee is that if it is not good for the farmer, the earth or our bodies he will not buy it. He always chooses organic, rainforest alliance, and swiss water processed decafs whenever possible.
